Meme (and now! with a bonus Recipe!)

Marylin over at A Little Space for Me tagged me for Cath’s Random Thoughts Meme.

Since it’s Sunday, I’m going to base my answers on the upcoming week instead of the one just passed.

Word for the week in my head… Freezing.

Thought for the week in my head… Better make a list of all of the things you plan to do.

Thing for the week in my life… Projects to button up this place for the winter.

Song for the week in my head… Unwritten - Natasha Bedingfield. It seems to go along with the first week of unemployment.

Food for the week in my belly… Lasagna Roll-ups. I’m taking over the kitchen one night this week and making my version of lasagna. We haven’t had it in forever.

- Make your favorite spaghetti sauce. Make it REALLY thick. I like to add cut up smoked sausage, onion chunks, green pepper, and mushrooms to a couple of cans of tomato sauce. Add oregano, parsley, a pinch of salt and pepper to taste. Use a little can of tomato paste to thicken it up.
- Prepare enough lasagna noodles for 1-2 per person. (Two is a lot.) Throw in a couple of extra in case of tearing/breakage. (Y’know, if you type the word lasagna enough it starts to look really fuckin’ weird.)
- After the noodles are cooked, run cold water over them so you can handle without losing any skin. For each noodle, lay it out flat. Spread enough sauce to coat 3/4 of the noodle. Sprinkle shredded mozzarella cheese on the sauce. (Did I forget to mention you need shredded mozzarella cheese? Well, y’know, I don’t actually write recipes very often…and how could you not know you’d need to have cheese anyway? Puh-leeze.)
- Starting at the non-sauce coated end of the noodle, start rolling that noodle like a jelly roll. Place in a non-stick baking pan (or make it non-stick by coating it VERY LIGHTLY with olive oil) with the seam side down. (Important point there people!)
- Repeat that last step until you’ve used up all of your noodles.
- DAMN! I forgot to say this. Make enough sauce to have leftover sauce! It’s important.
- Okay, so you have all of your roll-ups in a baking dish. You have leftover sauce. And cheese! Right? Okay.
- Is your oven heated to 350 degrees (F)? (If you’re not working in Fahrenheit, please go here.
- Use the leftover sauce to cover the rollups in the pan. Sprinkle the extra cheese on top of the sauce.
- Put the pan in the oven for about 20 minutes (I think. It’s been a long time since I’ve made these). Everything is already cooked, so you’re just looking to heat up the noodles and melt the cheese.

Seriously? Color? Um. Knowing Mr. Hot? Camouflage. Or brown (dead leaves that need to be composted into the garden).

Smile for the week on my face is…
No meetings. No sitting up in my office all day.

Blessing for the week in my heart…
Hoping that Mr. Hot and I can get through my first week of unemployment without a murder taking place. (I kid!) (No, I don’t!) (Yes, I do!) (Maybe.)

    Think of the 1st week of unemployement like vacation - it will be much more fun with all the time off and hopefully keep you from killing anyone…hehe

    I have probably said this before but… I have already told hubby that when he retires he better be planning on that greeting job at Walmart… or learning to like asking “Do you want fries with that?” ’cause seriously… he will NOT last 3 days around here, let alone a week.

    Fun stuff! Now with your roll ups, yum! I may have N make me some of those. Was mozzarella the only cheese you used?

    When you first mentioned the recipe I pictured finger food lasagna… This is way fun though and probably wont result in pounds of left over lasagna huh? Perfect!

    Now, put something fun on that to-do list for the week. Unemployment doesn’t have to be all bad/ sad you know. Did you go on your shopping spree yet?

    Why not just make the meat sauce and cram it into a manicotti shell?

    Same thing essentially. I make a lazy lasagne using cottage cheese instead of ricotta and I will just brown hamburger instead of making itsy teeny meatballs like ma mamma taught me when i was this high to a canoli.

    I got in trouble for posting an enchilada recipe on Sunday - yours sound yummy - although you don’t have to precook canneloni tubes, the filling is fiddly…

    OMG that sounds so good! The food, I mean, not the unemployment.

    I was telling somebody the other day that the only folks making all kinds of money with all the unemployment are the divorce attorneys and the liquor store owners. At least, that’s how it’s looking from my vantage point.
